Easy Greek Lamb Wraps
- 2 tsp. ghee, butter or coconut oil
- 1 pound ground lamb
- 1/4 - 1/2 sweet onion, chopped
- 2 zucchini, finely diced or grated
- 1 Tab. Greek Seasoning Blend, homemade or store-bought
- 1/4 bunch fresh parsley (cilantro will also work)
- sea salt & freshly ground black pepper, to taste
- Large Romaine leaves
Melt fat in large skillet over medium. Add lamb & onion and cook until lamb is no longer pink. Add zucchini and Greek seasoning. Cook until onion & zucchini are tender and lamb is thoroughly cooked. Add salt & pepper, to taste. Wrap in lettuce leaves.
