Easy Greek Lamb Wraps

  • 2 tsp. ghee, butter or coconut oil
  • 1 pound ground lamb
  • 1/4 - 1/2 sweet onion, chopped
  • 2 zucchini, finely diced or grated
  • 1 Tab. Greek Seasoning Blend, homemade or store-bought
  • 1/4 bunch fresh parsley (cilantro will also work)
  • sea salt & freshly ground black pepper, to taste
  • Large Romaine leaves 

Melt fat in large skillet over medium.  Add lamb & onion and cook until lamb is no longer pink.  Add zucchini and Greek seasoning.  Cook until onion & zucchini are tender and lamb is thoroughly cooked.  Add salt & pepper, to taste.  Wrap in lettuce leaves.
