Zucchini Noodles

Serves 1

  • 2 medium zucchini
  • 1/2 tsp. salt
  • 1/2 - 1 tsp. ghee
 
Use a spiralizer to create noodles (If you don’t have a spiralizer, draw a julienne slicer lengthwise down the zucchini to form noodles).  Mix zucchini noodles with salt and place in a colander over a large bowl.  Let sit at least 30 minutes.  Rinse with water then squeeze moisture out of noodles (or, simply squeeze liquid out without rinsing off salt).  Roll noodles in towel to remove any excess water.  Melt ghee over medium heat, add zucchini noodles and cook for 3-5 minutes.


Zucchini noodles are great with pesto or cream sauce or in a Buddha Bowl.
