Rainbow Smoothie

If you’re having trouble consuming ALL the colors of the rainbow every day, this smoothie is an amazing solution.  The recipe is adapted from the 2 micronutrient smoothie recipes developed by Rhonda Patrick, PhD.  Dr. Patrick has detailed information about the benefits of each of these ingredients on 2 videos here and here. 
 
All vegetables should be organic.
  • Kale, 4 leaves with ribs & stem removed
  • Red Swiss Chard, 1 large leaf with stem
  • Spinach, 1 packed cup
  • Celery, 1 large stalk
  • Parsley, 4 sprigs
  • Carrot, 1 large
  • Tomato, half
  • Red apple, half
  • Lemon juice from ½ large lemon
  • Frozen wild Maine blueberries, 3/4 - 1 cup*
  • Avocado, half
  • Hydrolyzed collagen powder, 1 scoop
  • Unflavored non-denatured protein powder, 1 scoop*
  • Almond, hemp or other nut/seed milk, 1 cup (can substitute water)
 
* Frozen wild blueberries are considered to contain the highest antioxidants of any other produce, but you may substitute them with frozen organic blueberries.  Non-denatured (or undenatured) whey protein is more biologically active than regular whey protein because it has NOT been exposed to high heat.

Optional:  To reduce oxalate content, blanch the kale, Swiss chard, celery & spinach; place blanched greens in fridge or freezer for several minutes.  I usually take this extra precaution, although Dr. Patrick doesn’t think it’s necessary. 

Place all ingredients in high-powered blender &  process until smooth.  Enjoy!
