Brian's Honey Wheat Oatmeal Bread
There is NOTHING better than the weekend mornings when my husband makes his famous honey wheat oatmeal bread. We drizzle the fresh-out-of-the-oven bread with local honey. This is the ultimate morning comfort food.
Yields 2 loaves
Preheat oven to 375°. Combine honey and brown sugar with warm water and wait 5 minutes.
Combine all ingredients, knead for about 7 minutes or until dough is no longer wet but smooth. Let bread rise until doubled in size (about 1 hour), punch down and shape into loaves. Let bread double in size again (about 30 minutes).
Bake until crusty and brown on top; about 35 minutes.

- 3 tsp. dry yeast
- 1/4 c. honey
- 1/4 c. packed brown sugar
- 1 stick softened unsalted butter
- 3/4 tsp. salt
- 1 tsp. cinnamon
- 1 1/2 c. wheat flour
- 1 1/2 c. old-fashioned rolled oats
- 4 c. unbleached flour
