Curried Quinoa Salad
- 2 cups cooked quinoa
- 3-4 green onions, diced
- 1 red bell pepper, diced
- 3/4 cup chopped walnuts or sunflower seeds, toasted
- 3/4 cup raisins
- 2 Tab. chopped parsley
Curry Dressing:
- 1/2 cup extra virgin olive oil
- juice of 1 large lemon or 2 medium lemons
- 1 Tab. curry powder
- 1/2 tsp. allspice powder
- 1/2 tsp. sea salt
- 1/2 tsp. freshly ground black pepper
In a large bowl, whisk together dressing ingredients, then add remaining ingredients. Toss well and chill for 2+ hours (or overnight).
