Chocolate Chia Energy Balls

  • 1 cup old-fashioned oats
  • 1/2 c. ground flaxseed
  • 1/2 c. almond butter
  • 1/2 c. raisins or currants
  • 1/4 c. chia seeds
  • <1/4 c. raw cacao powder
  • < 1/4 c. MCT oil
  • 1/4 c. honey 
  • 1 tsp. vanilla extract
  • generous pinch of sea salt

Combine all ingredients in medium bowl.  Using hands, roll into small 1/2 - 1” balls.  Place in refrigerator for about 30 minutes to set.  Store in the refrigerator or freezer.

Feel free to play with the ingredients – use any nut butter, add dark chocolate chips or cacao nibs, use maple syrup instead of honey, roll balls in unsweetened coconut flakes, etc.
