Carrot-Ginger Soup
- 8 carrots, sliced
- 1 Tab. fresh ginger, chopped
- 1 large clove garlic, chopped
- ¼ tsp. crushed red pepper
- ½ tsp. salt
- 4 cups water
- 2 tsp. fresh lemon juice
In large pot, bring all the ingredients except lemon juice to boil. Simmer, covered, until carrots are tender (about 15 minutes).
Working in batches, blend in blender until smooth. Add lemon juice.
