Baked Sweet Potato with ghee & cinnamon
- 1 sweet potato or yam
- 1 tsp. ghee or butter
- ½ tsp. ground cinnamon
- optional: lime
Scrub the outside of the sweet potato then rub it with oil/fat (don't prick it with fork, you'll just release the sweet juices!). Bake at 425-450 degrees F for 45-60 minutes or until super tender when pierced with fork. Slice in half then top with ghee & cinnamon. If desired, include a squeeze of lime on top.
Note: Alternately, you can cook sweet potato in a crockpot, 6-7 hours on low or 3 1/2 -4 hours on high.
