Baked Greek Shrimp
Prep time: 15 min., Cook time: 30 - 40 min.
Serves 4.
Preheat oven to 450. Heat oil in large skillet over medium heat. Add next 8 ingredients (onions through anchovies). Saute 8 – 10 minutes until saucy and vegetables are wilted.
Add shrimp and simmer until shrimp turn opaque, about 4 minutes. Transfer to casserole dish or 4 individual ramekins. Sprinkle with feta and Parmesan cheeses. Bake on top rack of oven for 15 minutes.

- ¼. c. olive oil
- 1 medium onion, chopped
- 1 lb. plum tomatoes, chopped
- 4 cloves garlic, minced
- ½ tsp. dried thyme
- ½ tsp. dried oregano
- Salt & freshly ground black pepper to taste
- 1 c. fresh spinach leaves, cut julienne style
- 2 oz. anchovies in olive oil
- 1 lb. medium uncooked shrimp, shelled and de-veined with tails left on
- 4 oz. feta cheese
- Grated Parmesan cheese
