Apple Chutney Salad

Wonderful served with a Rotisserie chicken or a robust soup.  

  • 1 head red leaf lettuce
  • 1 head green leaf lettuce
  • 4 c. baby spinach
  • 1 bunch green onions, chopped
  • 2 crisp red apples, chopped (Fuji, Gala, or Honeycrisp are great)
  • 2 Granny Smith apples, chopped
  • 1/4 c. walnuts or pecans, chopped
  • 1/4 c. dried cranberries (apple juice sweetened) or raisins

Chutney Dressing:
  • ¼ c. olive oil
  • ½ c. red wine vinegar (white wine vinegar also works well)
  • 4 Tab. mango chutney
  • 1-2 tsp. honey
  • 1 tsp. sea salt
  • 3 tsp. curry powder
  • 2 tsp. dry mustard

Toss dressing with salad ingredients. 

Optional: Top with roughly chopped rotisserie chicken for a complete meal.
