Roasted Red Cabbage
- 1 Tab. coconut oil, olive oil, butter or ghee
- 1 small head red cabbage
- 1/4 tsp. sea salt
- freshly ground black pepper, to taste
- optional: 1/2 - 1 tsp. garlic powder, 1/2 - 1 tsp. paprika
Preheat oven to 400. Wash the cabbage, then remove and discard its thick white core. Thinly slice cabbage into ribbons. Toss on a rimmed baking sheet with the remaining ingredients. Cover with aluminum foil and bake for 20 minutes. Toss the cabbage, remove the foil, and bake for another 20 minutes, until tender and browned in spots. Season with additional salt & pepper if desired.
If you prefer cabbage "steaks" instead of strips, simply cut thick slabs of the cabbage and add 20+ minutes to the cooking time.
Optional: toss with 1-2 Tab. balsamic vinegar before serving.
